Day 3 — chinchorreo

This is the day the island stops being a destination and starts being a place you know. You climb into the hills and follow the smoke — pork crackling over wood, a chicharrón snapped off and handed to you still hot, dominoes slapping a plastic table, a cold Medalla sweating in your hand.
